Chocolate Pumpkin Buttercream Cupcakes

Ingredients
- 1 1/2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup milk
For the Pumpkin Buttercream
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/3 cup pumpkin puree
- 1 teaspoon pumpkin spice
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, sift together flour, cocoa powder, baking powder, and salt.
- In a separate bowl, cream together the sugar and butter until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
- Alternately mix in the dry ingredients and milk into the butter mixture, starting and ending with the dry ingredients.
- Fill each cupcake liner about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean. Remove from oven and let cool.
- For the buttercream, beat the butter until creamy and pale. Gradually add powdered sugar, beating until smooth. Mix in the pumpkin puree, pumpkin spice, and vanilla until well combined.
- Once the cupcakes are completely cooled, pipe or spread the pumpkin buttercream on top.
