Gingerbread Whoopie Pies [35 Minutes]

Wonderville was blanketed in a fresh layer of snow, with the holiday spirit permeating the frosty air. It was the time of year when townsfolk eagerly showcased their culinary prowess in the annual “Wonderville Winter Dessert Contest.”

Every year had a different theme, and this year’s was “Retro Redo.” Participants were to take a classic winter dessert and revamp it into something modern and magical.

Eliza, the town librarian with a secret knack for baking, had been toying with an idea for weeks. She loved the comfort of traditional gingerbread cookies and the modern delight of whoopie pies. Why not combine the two with a spicy twist?

She envisioned a Gingerbread Whoopie Pie, with its soft cookie exteriors hinting at the spicy allure of the classic gingerbread, enveloping a rich spiced cream cheese filling.

The contest day arrived, and the aroma from various stalls tantalized the senses: warm cinnamon, roasted chestnuts, and bubbling berry compotes. Eliza’s stall, adorned with twinkling fairy lights and a sign that read “The Modern Ginger Delight,” was a humble setup showcasing her gingerbread whoopie pies.

The judges, renowned chefs from neighboring towns, made their rounds, tasting, and making notes. The murmurs grew louder as they reached Eliza’s stall. Each bite was met with widened eyes and appreciative nods.

As the sun set, casting a golden hue over Wonderville’s town square, the judges were ready to announce their decision.

And the winner was – Eliza’s Gingerbread Whoopie Pie with Spiced Cream Cheese filling! The crowd erupted in applause, and Eliza, overwhelmed with joy, vowed to share her recipe with the whole town.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1/2 cup molasses
  • 1/2 cup milk

For the Spiced Cream Cheese Filling

  • 8 oz cream cheese, softened
  • 4 tablespoons unsalted butter, softened
  • 2 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and spices. Set aside.
  3. In a larger bowl, cream together the softened butter and brown sugar until light and fluffy.
  4. Beat in the egg, followed by the molasses, ensuring everything is well combined.
  5. Alternately add the dry ingredients and milk to the wet mixture, starting and ending with the dry ingredients.
  6. Drop tablespoons of dough onto the prepared baking sheets, ensuring they’re spaced about 2 inches apart.
  7. Bake in the preheated oven for 9-11 minutes, or until the edges are set. Let them cool on the sheets for a few minutes before transferring them to a wire rack to cool completely.
  8. For the filling, beat together the cream cheese and butter until smooth.
  9. Gradually add in the sifted powdered sugar, then the vanilla and spices, and beat until creamy and well combined.
  10. Match the whoopie pie halves by size, and spread or pipe a generous dollop of filling onto one half, topping it with its pair.
  11. Repeat with the remaining pies and filling.

Notes

  • Chill the whoopie pies for about an hour before serving. This helps the filling set and flavors meld.
  • For added flair, roll the edges in crushed gingerbread cookies or festive sprinkles.
  • Adjust the spices in the filling to your preference. A pinch of ground cloves can add a deeper flavor profile.
